Not all the knives and tools are the same and it's important to choose the right method for sharpening. I personally prefer using high quality Japanese whetstones, but I am also using diamond sharpening stones, belt sander and water cooled bench grinder. All the blades are stropped to make sure that all burr is removed. I wash and dry all the knives after the sharpening is done. Wooden handles are cleaned and oiled where propriate. Tools are cleaned up and oiled after the sharpening as well.
